Fresh spring rolls with prawns, avocado, mango and peanut and Hoisin dip
Ingredients
- 1 cucumber
- 1 mango
- 2 carrots
- 100 gr peanuts
- 2 dl Hoisin sauce
- 12 sheets rice paper
- 400 gr Norwegian premium peeled prawns
Method
Peel and cut 1 cucumber, 1 mango and 2 carrots into thin strips.

Finely chop 100 gr of peanuts and mix with 2 dl Hoisin sauce and place in a bowl.

Moisten the sheets of rice paper one at a time and when they are soft, place some prawns and vegetables in the middle of the sheet, then roll to make a spring roll. Repeat 11 times.

Serve the fresh spring rolls with the peanut and Hoisin dipping sauce.
