Crispy bread with chipotle-marinated norwegian coldwater prawns and marinated pineapple


  • 3dl plain flour
  • 2 dl water
  • 1/2 tsp salt
  • 1 tbsp olive oil

  • 1/2 pineapple
  • 1/2 tsp finely chopped red chilli
  • 1/2 tsp finely chopped green chilli
  • 1 lime
  • 1 tbsp honey

  • 1 red onion
  • 1 tsp finely chopped garlic
  • 1 Chipotle spices

  • 200 gr Norwegian coldwater prawns


Mix the flour, water, salt and oil in a bowl until it forms a pliable dough. Cover the dough with a cloth, and leave it to stand for 20–30 minutes. I'm done with this step
Switch on the waffle iron on full heat. Divide the dough into small pieces and roll out to form rounds. Fry the rounds in the waffle iron until they are golden brown and crispy. I'm done with this step
Peel the pineapple and cut it into thin slices. Mix with the red and green chilli, the juice of the lime and a tablespoon of honey. Leave it to marinate for 10 minutes. I'm done with this step
Peel and cut the red onion into wedges. Heat a little oil in a pan and add the onion and garlic. Sweat the onion until it is translucent. Season with finely ground chipotle spices. I'm done with this step
Spread the chipotle-marinated coldwater prawns and pineapple on the crispy bread. I'm done with this step
